Dill Pickle Pasta Salad Recipe
Ingredients:
– 1 pound dry rotini pasta
– 8 ounces sharp white cheddar cheese, sliced into cubes
– 2 cups diced dill pickles, plus more for topping
– 1 tablespoon chopped fresh dill, plus more for topping
– 1 tablespoon chopped fresh chives, plus more for topping
– ¾ cup mayonnaise (store-bought or homemade)
– ½ cup sour cream
– ⅔ cup pickle juice (from the pickle jar)
– ½ white onion, minced
– 2 cloves garlic, minced
– ½ teaspoon kosher salt
– ¼ teaspoon ground black pepper
Directions:
1. Cook the pasta to al dente according to the package directions. Drain the pasta and let it cool completely.
2. In a large salad bowl, combine the cooled pasta, cheese cubes, diced dill pickles, chopped dill, and chives.
3. In a separate dish, whisk together the mayonnaise, sour cream, pickle juice, minced onion, minced garlic, salt, and black pepper until well combined.
4. Pour the dressing over the salad ingredients and toss until everything is evenly coated.
5. Refrigerate the salad for at least one hour before serving to allow the flavors to meld.
6. If desired, toss the salad with an additional ¼-½ cup of pickle juice just before serving for extra tanginess.
7. Garnish the salad with extra diced pickles, fresh dill, and chives before serving to add visual appeal and extra flavor.
