Ingredients

8 oz cream cheese, softened
1 cup shredded cheddar cheese
1/2 cup cooked bacon, crumbled
2 jalapeños, finely diced (adjust to taste)
2 green onions, chopped
10-12 egg roll wrappers
1 egg, beaten (for sealing)
Vegetable oil (for frying)
Directions

1️⃣ Prepare the filling:

In a bowl, mix together cream cheese, cheddar cheese, bacon, jalapeños, and green onions until well combined.
2️⃣ Fill the egg rolls:

Lay an egg roll wrapper flat. Place 1-2 tablespoons of the filling near the center. Fold in the sides and roll tightly, sealing the edges with a bit of the beaten egg. Repeat with remaining wrappers and filling.
3️⃣ Heat the oil:

Heat about 2 inches of vegetable oil in a deep skillet or pot to 350°F (175°C).
4️⃣ Fry the eggrolls:

Fry the eggrolls in batches for 2-3 minutes on each side, or until golden brown and crispy. Remove and drain on a paper towel-lined plate.
5️⃣ Serve:

Serve hot with your favorite dipping sauce, such as ranch or a spicy mayo.
