Ingredients
- 1 cup rolled oats
- 1 cup pitted dates
- 2 tablespoons cocoa powder
- 1/4 cup chopped nuts (walnuts, almonds, or pecans, optional)
- 2 tablespoons nut butter (e.g., almond or peanut butter)
- 1/2 teaspoon vanilla extract
- Pinch of salt
- 1/2 cup dark chocolate chips (for coating)
- 1 tablespoon coconut oil (optional, for smoother chocolate)
- Crushed nuts or shredded coconut (for garnish, optional)
Instructions
Step 1: Prepare the Base Mixture
- In a food processor, blend the rolled oats until they form a fine flour-like consistency.
- Add the pitted dates, cocoa powder, nut butter, vanilla extract, and a pinch of salt to the processor.
- Blend until the mixture is sticky and holds together when pressed. If it’s too dry, add a teaspoon of water at a time until the desired texture is achieved.
Step 2: Shape the Truffles
- Using your hands, scoop out about a tablespoon of the mixture and roll it into a ball. Repeat with the remaining mixture.
- Place the rolled truffles onto a plate or tray lined with parchment paper.
Step 3: Prepare the Chocolate Coating
- Melt the dark chocolate chips and coconut oil (if using) in a microwave-safe bowl in 20-second intervals, stirring between each, until smooth.
- Dip each truffle into the melted chocolate, coating it completely. Use a fork to lift and let the excess chocolate drip off.
Step 4: Garnish and Chill
- Place the chocolate-coated truffles back onto the parchment-lined tray.
- Sprinkle crushed nuts or shredded coconut on top before the chocolate sets.
- Refrigerate for at least 20 minutes, or until the chocolate is firm.
Serving Suggestions
- Serve these truffles as a snack, dessert, or a post-workout energy boost.
- Store them in an airtight container in the fridge for up to one week or freeze them for up to one month.
