Homemade Banana, Apple, and Nuts Cake

Ingredients

 4 ripe bananas, mashed

 2 small apples, peeled and diced

 4 large eggs

 200 ml of vegetable oil (or 180 g of melted butter)

 280 g of brown or white sugar

 320 g of wheat flour

 1 1/2 teaspoons of baking powder

 1 teaspoon of baking soda

 1 1/2 teaspoons of ground cinnamon

 1/2 teaspoon of salt

 120 g of chopped nuts (walnuts or pecans work beautifully)

 1 teaspoon of vanilla extract

 Optional garnish: 1 banana, sliced (for the top)

Instructions

1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan, two 9-inch loaf pans, or individual mini-cake molds.

2. Whisk the Wet Ingredients: In a large bowl, whisk together the eggs, sugar, oil (or melted butter), and vanilla extract until smooth and slightly pale. Stir in the thoroughly mashed bananas.

3. Combine the Dry Ingredients: In a separate large bowl, sift together the wheat flour, baking powder, baking soda, ground cinnamon, and salt.

4. Mix the Batter: Gradually add the dry ingredients to the wet mixture, folding gently with a spatula just until combined. Be careful not to overmix, as this can make the cake dense.

5. Fold in Fruits and Nuts: Gently fold in the peeled and diced apples along with 100 grams of the chopped nuts, saving the rest for the top.

6. Bake: Pour the batter into your prepared pan(s). If desired, arrange thin slices of an extra banana and sprinkle the remaining chopped nuts across the surface. Bake for 40 to 50 minutes (if using a large pan or loaf pans) or 25 to 30 minutes (if using smaller molds), until a toothpick inserted into the center comes out clean.

7. Cool and Serve: Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
