Ingredients
• 2 lbs Carrots: Peeled and cut into thick chunks (diagonal cuts look best).
• 3 tbsp Butter: Melted.
• 2 tbsp Honey: (For that perfect sticky glaze).
• 3 cloves Garlic: Minced.
• 1/2 tsp Dried Thyme or Oregano.
• Salt and Black Pepper: To taste.
• Fresh Parsley: For a pop of color at the end.
Preparation Method
1. Whisk the Glaze: In a small bowl, combine the melted butter, honey, minced garlic, and dried herbs.
2. Toss: Place your carrot chunks on a large rimmed baking sheet. Pour the honey butter mixture over them and toss until every piece is well-coated. Season with salt and pepper.
3. Roast: Spread them out in a single layer. Bake in a preheated oven at 200°C (400°F) for 20–25 minutes.
4. Caramelize: Halfway through, give them a good toss. If you want them extra sticky, you can turn on the broiler for the last 2 minutes—just watch them closely so the honey doesn’t burn!
5. Serve: Transfer to a bowl and garnish with fresh parsley.
