2 tbsp oil, divided
1/2 lb ground chicken or tofu
8 oz shiitake mushrooms
1 shallot, minced
4 garlic cloves, minced
1-inch ginger, grated
7 cups broth (chicken/vegetable)
4 tbsp white miso paste
2 tbsp soy sauce
1 tbsp sesame oil
1 tbsp chili oil
3/4 lb dry ramen noodles

Directions:

  1. Cook chicken, set aside.
  2. Sauté mushrooms, shallots, garlic, and ginger.
  3. Add broth and simmer 10 mins.
  4. Mix miso paste, add to broth.
  5. Cook noodles separately and combine.
