Homemade Pickled Beets (Easy & Classic)

Ingredients

• 2 lbs fresh beets

• 1 cup white vinegar

• ½ cup sugar

• 1 cup water

• ½ tsp salt

• ¼ tsp ground cloves (optional)

• ¼ tsp ground cinnamon (optional)

👩‍🍳 Instructions

1. Cook the beets

Wash beets and boil until fork-tender (30–40 minutes).

Drain, cool, peel, and slice.

2. Make the brine

In a saucepan, combine vinegar, sugar, water, salt, and spices.

Bring to a boil, stirring until sugar dissolves.

3. Jar it up

Pack sliced beets into clean jars.

Pour hot brine over beets, fully covering them.

4. Cool & chill

Let cool, seal, and refrigerate at least 24 hours before eating.
