Keto Cheddar Zucchini Bread (Low-Carb)

Ingredients

  • 2 cups zucchini, grated & well squeezed
  • 2 cups shredded cheddar cheese
  • 2 cups almond flour
  • 3 large eggs
  • ¼ cup melted butter or olive oil
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ tsp garlic powder (optional)
  • ½ tsp black pepper

👩‍🍳 Instructions

  1. Prep
    Preheat oven to 350°F (180°C). Grease a loaf pan.
  2. Mix wet ingredients
    In a bowl, whisk eggs and melted butter/oil.
  3. Add dry ingredients
    Stir in almond flour, baking powder, salt, pepper, and garlic powder.
  4. Fold in zucchini & cheese
    Add squeezed zucchini and shredded cheddar. Mix well.
  5. Bake
    Pour into loaf pan and smooth the top.
    Bake for 40–45 minutes, until golden and set.
  6. Cool & slice
    Let cool 10–15 minutes before slicing for best texture.
