Ingredients
- 2 cups zucchini, grated & well squeezed
- 2 cups shredded cheddar cheese
- 2 cups almond flour
- 3 large eggs
- ¼ cup melted butter or olive oil
- 1 tsp baking powder
- ½ tsp salt
- ½ tsp garlic powder (optional)
- ½ tsp black pepper

Preheat oven to 350°F (180°C). Grease a loaf pan. - Mix wet ingredients
In a bowl, whisk eggs and melted butter/oil. - Add dry ingredients
Stir in almond flour, baking powder, salt, pepper, and garlic powder. - Fold in zucchini & cheese
Add squeezed zucchini and shredded cheddar. Mix well. - Bake
Pour into loaf pan and smooth the top.
Bake for 40–45 minutes, until golden and set. - Cool & slice
Let cool 10–15 minutes before slicing for best texture.
