Creamy Spinach & Mushroom Stuffed Sweet Potatoes

Ingredients

  • 4 medium sweet potatoes
  • 2 cups fresh spinach
  • 1 cup mushrooms, chopped
  • 1 cup cream cheese, softened
  • ½ cup grated cheese (Parmesan, cheddar, or mozzarella)
  • ¼ cup milk
  • 2 cloves garlic, minced
  • Salt & pepper, to taste
  • Olive oil, for cooking

👩‍🍳 Instructions

  1. Bake the sweet potatoes
    Preheat oven to 400°F (200°C).
    Wash, pierce, and bake sweet potatoes for 45–50 minutes until tender.
  2. Prepare the filling
    Heat olive oil in a pan over medium heat.
    Sauté mushrooms until golden. Add garlic, then spinach until wilted.
  3. Make it creamy
    Stir in cream cheese, milk, salt, and pepper until smooth.
    Remove from heat and mix in half of the grated cheese.
  4. Stuff & bake
    Slice sweet potatoes open and fluff the insides slightly.
    Fill generously with the creamy mixture.
    Sprinkle remaining cheese on top.
  5. Final bake
    Bake for 10–15 minutes until bubbly and lightly golden.
