Ingredients
- 2 sheets puff pastry, thawed
- 2 cups spinach, finely chopped (fresh or frozen & well-drained)
- 1 cup ricotta cheese (or cream cheese)
- 1 cup shredded mozzarella
- ½ cup feta cheese, crumbled (optional but amazing)
- 1 egg (for filling)
- 1 egg, beaten (for egg wash)
- 2 cloves garlic, minced
- Salt & black pepper, to taste
- Sesame seeds (optional, for topping)
Instructions
1️⃣ Prep the filling
- If using fresh spinach, sauté it briefly until wilted, then squeeze out all liquid.
- In a bowl, mix spinach, ricotta, mozzarella, feta, garlic, 1 egg, salt, and pepper.
2️⃣ Assemble
- Preheat oven to 400°F (200°C).
- Roll out one sheet of puff pastry on parchment paper.
- Spread spinach mixture evenly, leaving a ½-inch border.
- Place the second pastry sheet on top and gently press edges to seal.
3️⃣ Cut & finish
- Lightly score into squares (don’t cut all the way through yet).
- Brush top with beaten egg.
- Sprinkle sesame seeds if using.
4️⃣ Bake
- Bake for 25–30 minutes until puffed and golden brown.
- Cool slightly, then cut fully into squares.
