Ingredients
Apple topping
- 1 apple, peeled & diced
- Juice of ½ lemon
- 1 tbsp sugar
Cake batter
- 2 eggs
- ½ cup (100 g) sugar
- ½ cup (120 ml) milk
- ¼ cup (60 ml) vegetable oil
- 1½ cups (190 g) all-purpose flour
- 1 tbsp baking powder
- 1 tsp vanilla (optional)
- Powdered sugar (for dusting)
Instructions
- Prepare the apple
- Mix diced apple with lemon juice and 1 tbsp sugar.
- Set aside.
- Make the batter
- Beat eggs with sugar until pale.
- Add milk, oil, and vanilla. Mix well.
- Sift in flour and baking powder. Stir until smooth.
- Assemble
- Pour batter into a greased or lined loaf pan.
- Spoon the apple mixture on top (press lightly).
- Bake
- Bake at 180°C / 350°F for 30–35 minutes
- Toothpick should come out clean.
- Finish
- Cool slightly, dust with powdered sugar, slice, and enjoy 😍
