No-Flour Potato & Cheese Mini Cakes

Ingredients

• 2 medium potatoes, boiled & mashed (warm)

• 2 eggs

• ½ cup grated cheese (mozzarella or cheddar)

• Salt to taste

• Black pepper (optional)

• A little oil or butter for frying

Instructions

1. Prepare the base

In a bowl, mix mashed potatoes with eggs until smooth.

2. Add cheese & seasoning

Stir in grated cheese, salt, and pepper. The mixture should be thick but soft.

3. Cook

Heat a non-stick pan with a little oil or butter over medium heat.

Scoop small portions and gently flatten.

4. Fry

Cook 2–3 minutes per side until golden brown and puffed.

5. Serve hot

Enjoy plain, with yogurt, honey, or savory dips.
