Zero-Point Chicken Salad

Ingredients

  • 3 cups cooked chicken breast, finely chopped or shredded
  • ¾ cup fat-free Greek yogurt
  • 1–2 tbsp fat-free mayonnaise (optional, still 0 points)
  • ½ cup celery, finely chopped
  • ¼ cup red onion, finely diced
  • ½ cup grapes, chopped (optional – adds sweetness)
  • Salt & black pepper, to taste
  • Optional add-ins (all 0 points):
    • Dill or parsley
    • Mustard
    • Pickles or relish
    • Green onions

👩‍🍳 Instructions

1️⃣ Prepare chicken

  • Chop or shred cooked chicken breast into small pieces.

2️⃣ Make the dressing

  • In a bowl, mix Greek yogurt and fat-free mayo until smooth.

3️⃣ Combine

  • Add chicken, celery, onion, and grapes (if using).
  • Season with salt and pepper.

4️⃣ Mix & chill

  • Stir until well combined.
  • Chill at least 30 minutes for best flavor.
