Ingredients
• 1 medium zucchini, diced
• 1 medium red bell pepper, diced
• 1 medium yellow bell pepper, diced
• 1 small red onion, finely chopped
• 1 cup (150 g) cherry tomatoes, halved
• 1½ cups cottage cheese
• 3 large eggs
• ½ cup shredded mozzarella or feta cheese
• 2 tbsp olive oil
• 2 cloves garlic, minced
• 1 tsp dried oregano
• ½ tsp dried basil
• Salt & black pepper, to taste
• Fresh parsley or thyme, chopped (optional)

👩🍳 Instructions
1. Preheat oven
Preheat to 375°F (190°C). Lightly grease a baking dish.
2. Sauté veggies (optional but recommended)
Heat olive oil in a pan.
Sauté onion and garlic 2–3 minutes.
Add zucchini and bell peppers, cook until slightly softened.
3. Mix base
In a bowl, whisk eggs with cottage cheese, oregano, basil, salt, and pepper.
4. Assemble
Spread veggies and cherry tomatoes evenly in the baking dish.
Pour egg–cottage cheese mixture over the top.
Sprinkle with mozzarella or feta.
5. Bake
Bake 30–35 minutes until set, golden, and bubbly.
6. Serve
Let rest 5 minutes, garnish with fresh herbs, and enjoy 💚
