Gentle & Healthy Vegetable Soup

Ingredients

For the Soup

• 1 onion, chopped

• 2 tbsp olive oil

• 2 leeks, chopped

• 2 stalks celery, chopped

• 1 carrot, diced

• 1 red bell pepper, diced

• 1 zucchini, diced

• 2 potatoes, diced

• 2 garlic cloves, minced

• 1 chili pepper, minced (optional)

• 6 cups vegetable broth or water

• Salt & black pepper, to taste

• Fresh parsley or green onions, chopped

👩‍🍳 Instructions

1. Start the base

Heat olive oil in a large pot over medium heat.

Add onion and leeks; sauté until soft and fragrant.

2. Add vegetables

Stir in celery, carrot, red pepper, zucchini, and potatoes.

Cook 3–4 minutes, stirring gently.

3. Flavor it

Add garlic and chili pepper (if using). Stir 30 seconds.

4. Simmer

Pour in broth or water.

Season with salt and pepper.

Simmer 20–25 minutes until vegetables are tender.

5. Finish & serve

Sprinkle with fresh herbs and enjoy warm.
