Spinach & Feta Egg Muffins 

Ingredients

  • 6 large eggs
  • 1 cup fresh spinach, chopped
  • ⅓ cup feta cheese, crumbled
  • 2 tbsp milk (optional, for fluffiness)
  • Salt & black pepper, to taste
  • Cooking spray or olive oil

👩‍🍳 Instructions

  1. Preheat oven
    Preheat to 375°F (190°C). Grease a muffin tin well.
  2. Prep fillings
    Divide chopped spinach evenly among muffin cups.
    Sprinkle feta on top.
  3. Mix eggs
    Whisk eggs with milk, salt, and pepper.
  4. Pour & bake
    Pour egg mixture into each cup, filling about ¾ full.
    Bake 18–22 minutes, until set and lightly golden.
  5. Serve or store
    Let cool slightly before removing. Enjoy warm or store for later.
