Ingredients
- 1 large head cauliflower, cut into florets
- 3 tbsp olive oil
- 1 tsp paprika (smoked if possible)
- 1 tsp garlic powder
- ½ tsp chili powder or cayenne (optional)
- Salt & black pepper, to taste
- 1 tbsp soy sauce or Worcestershire (optional, for umami)
- Fresh parsley or cilantro, chopped
- Lemon wedges (for serving)

- Preheat oven
Heat oven to 425°F (220°C). Line a baking sheet with parchment paper. - Season
In a large bowl, toss cauliflower with olive oil, paprika, garlic powder, chili powder, salt, pepper, and soy sauce (if using). - Roast
Spread florets in a single layer.
Roast for 25–30 minutes, flipping halfway, until deeply golden and crispy. - Finish & serve
Sprinkle with fresh herbs and serve with lemon wedges.
