Southern Biscuits & Sausage Gravy

Ingredients (Serves 4)

For the Biscuits

  • 2 cups (250g) all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup (115g) cold butter, cubed
  • 3/4 cup (180ml) cold milk or buttermilk

For the Sausage Gravy

  • 1 lb (450g) breakfast sausage (pork or turkey)
  • 3 tbsp all-purpose flour
  • 2 1/2 cups (600ml) milk
  • 1/2 tsp black pepper (or more to taste)
  • Salt (only if needed)

Preparation (Method)

1) Make the biscuits

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix flour + baking powder + salt.
  3. Add cold butter and cut it into the flour (with fingers or a pastry cutter) until it looks like coarse crumbs.
  4. Pour in milk/buttermilk and gently mix just until a dough forms (do not overmix).
  5. Turn dough onto a lightly floured surface. Pat into a 1-inch (2.5 cm) thick rectangle.
  6. Cut into biscuits (about 8). Place on the baking sheet.
  7. Bake 12–15 minutes until golden.

2) Make the sausage gravy

  1. In a skillet over medium heat, cook sausage until browned, breaking it up with a spoon.
  2. Sprinkle flour over the sausage and stir for 1 minute to cook out the raw flour taste.
  3. Slowly pour in milk while stirring constantly.
  4. Simmer 3–6 minutes until thick and creamy.
  5. Season with black pepper and salt if needed.

3) Serve

  • Split warm biscuits and spoon hot sausage gravy over the top.
