Cabbage & Egg Breakfast Patties

Ingredients

• 2 cups cabbage, finely shredded

• 1 carrot, grated

• 2–3 green onions, chopped

• 2 large eggs

• 1/2 cup shredded cheese (optional)

• 3–4 tablespoons all-purpose flour (or breadcrumbs)

• 1/2 teaspoon salt

• 1/4 teaspoon black pepper

• 1/2 teaspoon garlic powder (optional)

• 2–3 tablespoons oil, for frying

Instructions

1. Place shredded cabbage in a bowl, sprinkle with a little salt, and squeeze it well to remove excess moisture.

2. Add grated carrot, chopped green onions, eggs, cheese (if using), flour, salt, pepper, and seasonings. Mix until a thick batter forms.

3. Heat oil in a skillet over medium heat.

4. Scoop the mixture and shape into small patties. Fry 3–4 minutes per side, until golden brown and cooked through.

5. Serve hot.
