Cheesy Vegetable Egg Casserole

Fluffy eggs loaded with veggies and topped with golden melted cheese. Perfect for meal prep, brunch, or an easy dinner with salad.

Ingredients (9×13-inch dish, serves 8–10)

  • 10 large eggs
  • 1 cup milk (or half-and-half for richer)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder (optional)
  • 1 tsp onion powder (optional)

Vegetables (use what you have)

  • 1 cup bell peppers, diced
  • 1 cup onions, diced
  • 1 cup mushrooms, sliced
  • 1–2 cups spinach (or broccoli), chopped

Cheese

  • 2 cups shredded cheddar (or mozzarella / mixed cheese)
  • 1/2 cup grated Parmesan (optional)

Optional add-ins

  • 1 lb cooked breakfast sausage or bacon (optional)
  • Chopped parsley for garnish

Instructions

  1. Preheat oven
    Preheat to 190°C (375°F). Grease a 9×13-inch baking dish.
  2. Cook veggies (recommended)
    Sauté onions, peppers, and mushrooms for 5–7 minutes to remove moisture.
    Stir in spinach for 30 seconds until wilted.
  3. Mix eggs
    In a large bowl, whisk eggs, milk, salt, pepper, and seasonings.
  4. Assemble
    Spread cooked veggies in the dish. Pour egg mixture over them.
    Sprinkle cheese evenly on top.
  5. Bake
    Bake 30–40 minutes until set in the center and golden on top.
  6. Rest & serve
    Let rest 10 minutes, then slice and serve.
