Ingredients
• 3–4 cucumbers, sliced
• 4–5 tomatoes, chopped (or 2 cups cherry tomatoes, halved)
• 1 small red onion, thinly sliced
Dressing
• 1/3 cup apple cider vinegar (or white vinegar)
• 2 tbsp olive oil
• 1–2 tbsp water (optional, to soften the vinegar taste)
• 1 tbsp lemon juice (optional)
• 1–2 tsp sugar or honey (optional, balances tang)
• 1 tsp salt (or to taste)
• 1/2 tsp black pepper
• 1 tsp dried oregano (or Italian seasoning)
• 1–2 tbsp chopped parsley (optional)
Instructions
1. Add cucumbers, tomatoes, and onion to a bowl.
2. Whisk all dressing ingredients together.
3. Pour over the veggies and toss well.
4. Chill 15–30 minutes (best flavor) and serve cold.
