Garlic Butter Tomato Fish (Cod or Halibut)

Flaky white fish cooked in one pan with juicy cherry tomatoes, garlic, herbs, and a buttery lemon sauce. Fast, healthy, and restaurant-level delicious.

Ingredients (Serves 4)

  • 4 white fish fillets (cod, halibut, haddock, tilapia) — about 6 oz / 170 g each
  • 1 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 1/2 tsp paprika (optional)
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 4 garlic cloves, minced
  • 2 cups cherry tomatoes, halved
  • 1/4 cup chicken or vegetable broth (or white wine)
  • 1 tbsp lemon juice
  • 1 tsp Italian seasoning (or oregano)
  • 2 tbsp fresh parsley or basil, chopped

Instructions

  1. Season the fish
    Pat fish dry. Season both sides with salt, pepper, and paprika.
  2. Sear the fish
    Heat olive oil in a large skillet over medium-high heat.
    Add fish and cook 3–4 minutes per side (depending on thickness) until golden and just cooked through.
    Remove fish to a plate.
  3. Make the sauce
    Reduce heat to medium. Add butter.
    Add garlic and sauté 20–30 seconds (don’t burn).
    Add cherry tomatoes and cook 3–4 minutes until they soften and release juices.
  4. Finish the sauce
    Stir in broth (or wine), lemon juice, and Italian seasoning. Simmer 1–2 minutes.
  5. Return fish to the pan
    Put fish back in the skillet and spoon sauce over it. Simmer 1–2 minutes to warm through.
  6. Garnish & serve
    Sprinkle parsley/basil and serve hot.
