Avocado Chicken Salad Lettuce Wraps
These wraps are great for a light lunch or a refreshing dinner. They’re also low in carbs, thanks to the lettuce wraps.
Ingredients:
For the Avocado Chicken Salad:
- 2 cooked chicken breasts, shredded or diced
 - 2 ripe avocados, peeled and dice
 - 1/4 cup red onion, finely chopped
 - 1/4 cup cilantro, chopped
 - 1/4 cup cherry tomatoes, halved
 - 1 tablespoon lime juice (for flavor and to prevent avocado from browning)
 - Salt and pepper to taste
For the Wraps: - Romaine lettuce or butter lettuce leaves, washed and dried (as the wraps)
 - Crumbled feta or goat cheese for extra flavor (optional)
Instructions: 
- If you haven’t already cooked the chicken, you can poach, grill, or bake the chicken breasts until fully cooked.
 - Let them cool and shred or dice them into bite-sized pieces.
 - In a large bowl, combine the cooked chicken, diced avocados, red onion, cilantro, and cherry tomatoes.
 - Add the lime juice, and season the salad mixture with salt and pepper.
 - Gently toss to combine, ensuring that the avocado doesn’t get too mashed.
 - Take a lettuce leaf and spoon a portion of the avocado chicken salad onto the center.
 - You can sprinkle some cheese if you’re using it.
 - Fold the lettuce leaf around the filling and serve.
