Thai Coconut Curry Noodle Soup

Ingredients:

  • 1 tbsp coconut oil
  • 1 onion (sliced)
  • 3 garlic cloves (minced)
  • 1 tbsp ginger (minced)
  • 2 tbsp red curry paste
  • 1 can (14 oz) coconut milk
  • 4 cups vegetable or chicken broth
  • 1 tbsp fish sauce or soy sauce
  • 1 tbsp lime juice
  • 1 red bell pepper (sliced)
  • 1 cup mushrooms (sliced)
  • 1/2 lb rice noodles or your favorite noodles
  • 1/2 cup fresh cilantro or basil (for garnish)
  • Lime wedges (for serving)

Instructions:

1️⃣ Heat coconut oil in a large pot over medium heat. Sauté onion, garlic, and ginger until softened.

2️⃣ Stir in red curry paste, cooking for 1-2 minutes until fragrant.

3️⃣ Add coconut milk, broth, fish sauce (or soy sauce), and lime juice. Bring to a simmer.

4️⃣ Add bell pepper and mushrooms, cooking until vegetables are tender, about 5 minutes.

5️⃣ Add noodles to the pot and cook according to package instructions, until tender.

6️⃣ Serve hot, garnished with fresh cilantro or basil and lime wedges!

Notes:

  • For added protein, top with cooked chicken, shrimp, or tofu.
