Sheet Pan Honey Garlic Kielbasa, Potatoes, and Broccoli
Ingredients:
1 lb kielbasa, sliced into 1/2-inch pieces
1 lb baby potatoes, halved
2 cups broccoli florets
3 tablespoons olive oil
2 tablespoons honey
3 cloves garlic, minced
1 tablespoon soy sauce
1 teaspoon Dijon mustard
1/2 teaspoon smoked paprika
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions:
Preheat your oven to 400°F (200°C). Line a large sheet pan with parchment paper or lightly grease it.
In a large bowl, toss the halved baby potatoes with 1 tablespoon olive oil, smoked paprika, salt, and pepper. Spread the potatoes evenly on the prepared sheet pan. Roast for 15 to 20 minutes until they begin to soften.
While the potatoes roast, toss the broccoli florets and kielbasa slices in the same bowl with the remaining olive oil, salt, and pepper. After the potatoes have roasted, add the kielbasa and broccoli to the sheet pan. Roast for another 15 minutes.
In a small bowl, whisk together honey, minced garlic, soy sauce, and Dijon mustard to make the honey garlic sauce.
Remove the sheet pan from the oven and drizzle the sauce over the kielbasa, potatoes, and broccoli. Toss gently to coat everything evenly. Return to the oven and roast for an additional 5 to 7 minutes until glazed.
Garnish with fresh parsley and serve immediately.
