Ingredients:
2 large onions, peeled and cut into rings
1 cup all-purpose flour
1/2 cup cornstarch
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon garlic powder
1 cup cold sparkling water
1 cup shredded cheddar cheese
1/2 cup grated parmesan cheese
Oil for frying
Directions:
In a bowl, whisk together the flour, cornstarch, baking powder, salt, pepper, and garlic powder.
Gradually add the cold sparkling water to the dry ingredients and stir until a smooth batter forms.
Fold the shredded cheddar cheese and grated parmesan cheese into the batter.
Heat the oil in a deep frying pan over medium heat. Test the oil temperature by dropping in a small amount of batter. If it sizzles and rises to the top, the oil is ready.
Dip each onion ring into the batter, ensuring it’s fully coated, and carefully lower it into the hot oil.
Fry the rings in batches for about 3-4 minutes or until golden brown and crispy.
Using tongs, remove the rings from the oil and drain on paper towels.
Serve immediately with a side of dipping sauce, such as ranch or spicy ketchup.
