Slow Cooker Foil Wrapped Meat & Zucchini

Ingredients

Meat: 1 lb of lean ground beef, ground turkey, or steak bites.

Vegetables: 2–3 medium zucchini, sliced into rounds or half-moons.

Sauce/Marinade: 1/2 cup of your choice (Italian dressing, BBQ sauce, or olive oil mixed with garlic).

Cheese: 1–2 cups of shredded cheese (cheddar, mozzarella, or a preferred blend).

Instructions

1. Prepare the Foil: Cut large pieces of heavy-duty aluminum foil for the packets.

2. Assemble: Place a portion of the meat and zucchini in the center of each foil sheet.

3. Season: Pour the marinade or sauce evenly over the meat and vegetables.

4. Seal: Fold the edges of the foil tightly to create sealed packets.

5. Cook: Place the packets in the slow cooker. Cover and cook on High for 3–4 hours or Low for 6–7 hours, depending on the cut of meat used.

6. Add Cheese: Carefully open the packets during the last 10–15 minutes of cooking, sprinkle with shredded cheese, and re-seal (or leave slightly open) until the cheese is melted and bubbly.

7. Serve: Enjoy the tender meat and zucchini directly from the foil or plated.

Why This Recipe Works

Moisture Control: The foil prevents the zucchini from becoming too mushy while keeping the meat juicy.

Easy Cleanup: Since everything is contained in foil, there is minimal scrubbing required for the slow cooker pot.

Versatile: You can easily swap the zucchini for other quick-cooking vegetables like bell peppers or green beans.
