Ingredients
• 1 1/2 cups All-purpose flour
• 1 teaspoon Baking powder
• 1/2 teaspoon Baking soda
• 1/2 teaspoon Salt
• 1 teaspoon Ground cinnamon
• 1/2 teaspoon Ground ginger
• 2 large Eggs
• 1/2 cup Granulated sugar
• 1/2 cup Brown sugar (packed)
• 1/2 cup Vegetable oil
• 1 teaspoon Vanilla extract
• 1 1/2 cups Grated carrots (freshly grated is best)
• 1/2 cup Chopped walnuts (for the batter or topping)
For the Glaze:
• 1 cup Powdered sugar
• 1-2 tablespoons Milk or lemon juice
Instructions
1. Preheat & Prep: Heat your oven to 175°C (350°F). Grease a standard loaf pan or line it with parchment paper.
2. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and ginger.
3. Mix Wet Ingredients: In a large bowl, beat the eggs with both sugars until smooth. Whisk in the vegetable oil and vanilla extract.
4. Combine: Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.
5. Fold in Carrots: Gently stir in the grated carrots and half of the walnuts.
6. Bake: Pour the batter into the loaf pan. Sprinkle the remaining walnuts on top. Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean.
7. Cool & Glaze: Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack. Once completely cool, whisk the powdered sugar and milk together to create a glaze and drizzle it over the top.
