Ingredients
• Potatoes: 2-3 lbs of small red potatoes (kept whole for a better texture).
• Butter: 1/2 cup (1 stick) of unsalted butter, cubed.
• Garlic: 4-5 cloves of minced garlic (the “secret weapon” for that amazing smell).
• Seasoning: 1 teaspoon of dried rosemary or thyme, salt, and black pepper to taste.
• Garnish: Fresh parsley or chives.
Instructions
1. Prep: Wash the red potatoes and pat them dry.
2. Combine: Place the whole potatoes in the slow cooker.
3. Add Flavor: Top the potatoes with the cubed butter and minced garlic. Sprinkle the herbs, salt, and pepper over the top (as shown in your image).
4. Slow Cook: Cover and cook on Low for 5-6 hours or on High for 3 hours until the potatoes are fork-tender.
5. Toss: Give the potatoes a gentle toss in the garlic-butter sauce that has formed at the bottom before serving.
6. Serve: Sprinkle with fresh herbs and serve warm.
Benefits
• Rich in Potassium: Red potatoes are an excellent source of potassium, which is vital for heart health and maintaining healthy blood pressure.
• Vitamin B6: Provides a good amount of Vitamin B6, which supports brain health and helps the body produce “feel-good” hormones like serotonin (explaining why it keeps everyone in a good mood!).
• Energy Dense: The healthy carbohydrates in potatoes provide sustained energy for a productive day.
• Hands-Off Cooking: Using a slow cooker saves you time in the kitchen, making it a stress-free option for family dinners.
