Ingredients
• 1 head of cabbage
• 2 lbs Ground beef
• 1 cup Rice (washed and drained)
• 1 large Onion, finely chopped
• 2 cloves Garlic, minced
• 1/4 cup Fresh parsley and dill, chopped
• Seasonings: Salt, black pepper, cumin, and mixed spices
• For the Sauce: 2 cups tomato juice, 1 tablespoon tomato paste, and beef or chicken broth
Preparation
1. Prepare the Cabbage: Boil the whole head of cabbage in water with a pinch of cumin until the leaves soften. Carefully remove the leaves, trim the tough center ribs, and cut them into medium squares.
2. The Filling: In a large bowl, mix the ground beef, rice, onion, garlic, herbs, and spices. Knead well until the mixture is fully combined.
3. Rolling: Place a small spoonful of filling at the edge of a cabbage leaf and roll it up tightly (as shown in the image).
4. Cooking: Arrange the rolls in a large pot in a circular pattern. Pour the mixture of tomato juice and broth over them until they are slightly covered.
5. Simmer: Place a heavy plate on top of the rolls to keep them from opening. Bring to a boil, then reduce the heat and simmer for 45–60 minutes until fully cooked.
