Slow Cooker Garlic Butter Potatoes & Onions

Ingredients

3 lbs gold or yellow potatoes, sliced into 1/2-inch thick rounds

2 large yellow onions, thinly sliced

4 tablespoons unsalted butter, melted

4 cloves garlic, minced

1 teaspoon dried thyme or rosemary

1/2 teaspoon paprika

Salt and cracked black pepper to taste

Optional: Fresh parsley or chives for garnish

Preparation

1. Layer the Base: Lightly grease your slow cooker. Place a layer of sliced onions at the bottom, followed by a layer of sliced potatoes. Repeat the layers until finished.

2. Seasoning: In a small bowl, whisk together the melted butter, minced garlic, thyme (or rosemary), paprika, salt, and pepper.

3. Coat: Pour the garlic butter mixture evenly over the potatoes and onions. Gently toss with a large spoon if needed to ensure every slice is coated.

4. Slow Cook: Cover and cook on Low for 6–7 hours or on High for 3–4 hours, until the potatoes are fork-tender and the onions have caramelized into a golden brown.

5. Serve: Garnish with fresh herbs and serve warm directly from the pot.
