Ingredients
• 2 cups Milk chocolate chips or high-quality melting chocolate
• 1/4 cup Creamy peanut butter (adds a smooth texture and subtle flavor)
• 1 ½ cups Crisped rice cereal
• 1/2 cup Mini marshmallows (optional, for extra chew)
• 1/2 teaspoon Vanilla extract
• A pinch of sea salt
Preparation
1. Prepare the Pan: Line an 8×8 inch baking pan with parchment paper, leaving a bit of overhang on the sides to make it easy to lift the bars out later.
2. Melt the Chocolate: In a microwave-safe bowl, combine the chocolate chips and peanut butter. Heat in 30-second intervals, stirring in between, until the mixture is completely melted and glossy.
3. Add Flavor: Stir in the vanilla extract and a pinch of salt.
4. Fold in the Crunch: Gently fold in the crisped rice cereal (and mini marshmallows, if using) until every piece is thoroughly coated in the chocolate mixture.
5. Set: Pour the mixture into your prepared pan and use a spatula to press it down into an even layer.
6. Chill: Place the pan in the refrigerator for at least 1–2 hours until the chocolate has completely hardened.
7. Slice: Lift the parchment paper to remove the block from the pan. Use a sharp knife to cut into squares or bars.
