Ingredients
• 3 medium Zucchinis, grated and squeezed dry
• 3 large Eggs, beaten
• 1 cup All-purpose flour
• 1 teaspoon Baking powder
• 1/2 cup Vegetable oil
• 1 small Onion, finely diced
• 2 cups Shredded Cheddar or Mozzarella cheese (divided)
• 1/4 cup Fresh parsley or dill, chopped
• Salt and black pepper to taste
• Optional: Diced ham or cooked bacon for extra savoriness
Preparation
1. Prep the Zucchini: Grate the zucchinis and use a clean kitchen towel to squeeze out as much excess moisture as possible. This is the “secret” to ensuring your bake isn’t watery.
2. Mix: In a large bowl, whisk together the eggs and oil. Add the flour, baking powder, salt, pepper, and herbs. Stir until a thick batter forms.
3. Combine: Fold in the squeezed zucchini, diced onion, and one cup of the shredded cheese.
4. Bake: Pour the mixture into a greased 9×13 inch glass baking dish.
5. Golden Top: Sprinkle the remaining one cup of cheese over the top.
6. Cook: Bake at 190°C (375°F) for 30–35 minutes, or until the center is set and the top is a beautiful golden brown.
7. Serve: Let it rest for 5 minutes before slicing so the cheese can set.
