Ingredients
• 3 cups (600 ml) fresh orange juice (strained)
• 1 cup (160 g) granulated sugar
• 1 cup (120 g) cornstarch
• For Coating: Shredded coconut or powdered sugar
Preparation
1. Combine: In a medium saucepan, whisk together the fresh orange juice, sugar, and cornstarch while the juice is still cold. Make sure there are no lumps of starch remaining.
2. Cook: Place the saucepan over medium heat. Stir constantly with a wooden spoon or whisk.
3. Thicken: Continue stirring until the mixture starts to bubble and thickens into a heavy, translucent paste (this usually takes about 10–15 minutes). It should have a jelly-like consistency.
4. Prepare the Mold: Lightly grease a square glass container or line it with plastic wrap.
5. Set: Pour the hot orange mixture into the container and smooth the top with a wet spatula. Let it cool to room temperature, then refrigerate for at least 4–6 hours (overnight is best) until completely firm.
6. Cut: Once set, turn the delight out onto a surface sprinkled with shredded coconut or powdered sugar. Use a sharp, slightly wet knife to cut it into small cubes.
7. Coat: Roll each cube in the shredded coconut until fully covered on all sides.
8. Serve: Enjoy these soft, chewy treats with tea or coffee.
