Ingredients
• 2 large ripe bananas
• 2 cups (500 ml) milk
• 1/2 cup sugar (adjust to taste)
• 3 tablespoons cornstarch
• 1 teaspoon vanilla extract
• For the Caramel Topping:
• 1/2 cup sugar
• 1 tablespoon water
• 1 extra banana, sliced into rounds
Preparation
1. Blend: Place the 2 bananas and milk into a blender and process until completely smooth.
2. Thicken: Pour the banana-milk mixture into a saucepan. Add the sugar and cornstarch. Whisk constantly over medium heat until the mixture thickens into a creamy pudding consistency. Stir in the vanilla extract.
3. Set: Pour the pudding into individual serving bowls or ramekins. Let them cool to room temperature, then refrigerate for at least 2 hours.
4. Prepare Caramel: In a small skillet, heat the sugar and water over medium heat without stirring until it turns a light golden amber color.
5. Add Bananas: Carefully stir the sliced banana rounds into the caramel to coat them.
6. Garnish: Spoon the caramelized banana slices and a little syrup over the top of each chilled pudding.
7. Serve: Serve immediately while the topping is warm or chilled.
