Ingredients
• The Flourless Base: 2 ½ cups Almond Flour.
• The Citrus: 1 large Orange (zest and juice).
• The Sweetener: ¾ cup Monk Fruit or Erythritol (replaces the sugar).
• The Bind: 3 large Eggs and ½ cup melted Butter (or Coconut Oil).
• The Lift: 1 tsp Baking Powder and a pinch of salt.
• Optional Glaze: 2 tbsp powdered Monk Fruit mixed with 1 tsp Orange juice.
Preparation Steps
1. Prep the Orange: Zest the entire orange into a large bowl, then squeeze out the juice. You should have about ¼ to ½ cup of juice.
2. Mix Wet Ingredients: Add the eggs, melted butter, and sweetener to the orange juice and zest. Whisk until the mixture is slightly frothy.
3. Combine Dry: Stir in the almond flour, baking powder, and salt. Mix until you have a smooth, thick batter, just like the one being whisked in your process photos.
4. Bake: Pour the batter into greased round cake pans. Bake at 350°F (175°C) for 25–30 minutes.
• Note: While the prep takes only 5 minutes, the baking time ensures that deep golden crust shown in your final picture.
5. The Glaze: While the cake is still warm, you can brush on a simple orange juice and monk fruit glaze to make it extra “melty” and moist.
6. Cool & Slice: Let it cool in the pan for 10 minutes before turning it out. This helps the almond flour structure set so it doesn’t crumble when sliced.
