Zucchini Patties – Better Than Meat!

Servings: 8–10 patties
Ingredients:
2 medium zucchinis, grated
1 medium carrot, grated
1 cup shredded cheese (mozzarella, cheddar, or your favorite)
2 large eggs
3–4 tablespoons chopped green onion
Salt and black pepper to taste
(Optional) 1 clove garlic, minced or ½ teaspoon garlic powder
(Optional) ¼ cup breadcrumbs or oat flour if mixture feels too wet
Instructions:
Grate the zucchini and carrot, then place them in a clean kitchen towel or cheesecloth and squeeze out as much liquid as possible. This helps keep your patties from being soggy.
In a large bowl, combine the grated veggies, shredded cheese, eggs, chopped green onion, and garlic (if using). Season with salt and pepper to taste.
If the mixture is too wet to form into patties, add a little bit of breadcrumbs or oat flour until it holds together.
Heat a non-stick skillet over medium heat and add a little oil or cooking spray.
Scoop about 2 tablespoons of mixture per patty and gently flatten them into round shapes. Cook in batches.
Pan-fry the patties for 3–4 minutes per side or until golden brown and cooked through.
Remove from skillet and let drain on a paper towel. Serve warm!
