Grandma’s Classic Cream Puffs

Ingredients

• ½ cup water

• ½ cup milk

• ½ cup (115 g) unsalted butter

• 1 tbsp sugar

• ¼ tsp salt

• 1 cup (125 g) all-purpose flour

• 4 large eggs (room temperature)

Instructions

1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment.

2. In a saucepan, bring water, milk, butter, sugar, and salt to a rolling boil.

3. Add flour all at once, stirring quickly until a smooth dough forms and pulls away from the pan.

4. Cook dough 1–2 minutes, stirring, to dry it slightly.

5. Transfer dough to a bowl. Let cool 5 minutes.

6. Beat in eggs one at a time until dough is smooth, glossy, and thick.

7. Pipe or spoon small mounds onto baking sheet.

8. Bake 25–30 minutes until puffed and golden (don’t open oven).

9. Turn oven off, crack door, let shells dry 10 minutes. Cool completely.
