Ingredients
- 4 medium sweet potatoes
- 2 cups fresh spinach
- 1 cup mushrooms, chopped
- 1 cup cream cheese, softened
- ½ cup grated cheese (Parmesan, cheddar, or mozzarella)
- ¼ cup milk
- 2 cloves garlic, minced
- Salt & pepper, to taste
- Olive oil, for cooking
👩🍳 Instructions
- Bake the sweet potatoes
Preheat oven to 400°F (200°C).
Wash, pierce, and bake sweet potatoes for 45–50 minutes until tender. - Prepare the filling
Heat olive oil in a pan over medium heat.
Sauté mushrooms until golden. Add garlic, then spinach until wilted. - Make it creamy
Stir in cream cheese, milk, salt, and pepper until smooth.
Remove from heat and mix in half of the grated cheese. - Stuff & bake
Slice sweet potatoes open and fluff the insides slightly.
Fill generously with the creamy mixture.
Sprinkle remaining cheese on top. - Final bake
Bake for 10–15 minutes until bubbly and lightly golden.
