Brilliant Apple Cake (Better Than Apple Pie!)

For the Dough

• 300 g all-purpose flour (2½ cups)

• 50 g powdered sugar (½ cup)

• Pinch of salt

• 1 tsp baking powder

• 180 g cold butter, cubed (¾ cup)

• 1 egg

Instructions (Dough):

1. Mix flour, powdered sugar, salt, and baking powder.

2. Rub in butter until crumbly.

3. Add egg and knead into a soft dough.

4. Press dough into a lined baking pan (sides included).

5. Chill while preparing filling.

🍎 For the Filling

• 6–7 medium apples, peeled and cored

• 2 eggs

• 100 g sugar (½ cup)

• 200 ml heavy cream (¾ cup + 2 tbsp)

• 1 tsp vanilla extract

• 1 tbsp cornstarch

• Sliced almonds (optional, for topping)

👩‍🍳 Instructions

1. Arrange whole apples upright inside the chilled dough.

2. Whisk eggs, sugar, cream, vanilla, and cornstarch until smooth.

3. Carefully pour mixture over apples.

4. Sprinkle almonds on top (optional).

5. Bake at 180°C / 350°F for 60–70 minutes until golden and set.

6. Cool slightly before slicing.
