Fresh Cucumber Avocado Herb Salad

Ingredients

  • 2 large cucumbers, chopped or thinly sliced (about 400 g)
  • 2 medium avocados, diced (about 300 g)
  • ½ cup fresh parsley, finely chopped (15 g)
  • 2 tbsp fresh dill or cilantro (optional, but delicious)
  • 2 tbsp olive oil
  • 1 tbsp fresh lemon or lime juice
  • 1 small garlic clove, minced
  • Salt, to taste
  • Black pepper, to taste
  • Optional: ½ tsp Dijon mustard or honey for balance

Instructions

1️⃣ Prep the vegetables

  • Wash cucumbers and cut into bite-size pieces
  • Dice avocados gently to avoid mashing

2️⃣ Make the dressing

  • In a small bowl, whisk olive oil, lemon juice, garlic, salt, pepper
  • Add mustard or honey if using

3️⃣ Combine

  • Add cucumbers, avocados, parsley, and herbs to a bowl
  • Drizzle dressing over the salad

4️⃣ Toss gently

  • Mix carefully so the avocado stays chunky

5️⃣ Serve immediately

  • Best eaten fresh while creamy and vibrant
