Ingredients

  • 2 cups (500 g) plain low-fat Greek yogurt
  • 3 large eggs
  • ¼ cup (50 g) granulated sugar or sugar substitute
  • 3 tbsp cornstarch
  • 1 tsp vanilla extract
  • Zest of ½ lemon (optional, but recommended)
  • Pinch of salt
  • Powdered sugar (for dusting, optional)

Instructions

1️⃣ Preheat oven

  • Preheat to 350°F (175°C)
  • Line a loaf pan (or small rectangular pan) with parchment paper

2️⃣ Mix the batter

  • In a bowl, whisk eggs and sugar until smooth
  • Add yogurt, vanilla, lemon zest, and salt
  • Whisk in cornstarch until completely smooth and lump-free

3️⃣ Bake

  • Pour batter into prepared pan
  • Bake for 40–45 minutes, until set and lightly golden on top
