Ingredients
- 2 cups (500 g) plain low-fat Greek yogurt
- 3 large eggs
- ¼ cup (50 g) granulated sugar or sugar substitute
- 3 tbsp cornstarch
- 1 tsp vanilla extract
- Zest of ½ lemon (optional, but recommended)
- Pinch of salt
- Powdered sugar (for dusting, optional)
Instructions
1️⃣ Preheat oven
- Preheat to 350°F (175°C)
- Line a loaf pan (or small rectangular pan) with parchment paper
2️⃣ Mix the batter
- In a bowl, whisk eggs and sugar until smooth
- Add yogurt, vanilla, lemon zest, and salt
- Whisk in cornstarch until completely smooth and lump-free
3️⃣ Bake
- Pour batter into prepared pan
- Bake for 40–45 minutes, until set and lightly golden on top
- Center should jiggle slightly (custard texture)
4️⃣ Cool completely
- Let cool at room temperature
- Refrigerate 2–3 hours (important for texture!)
5️⃣ Serve
- Dust lightly with powdered sugar if desired
- Slice into 8–10 pieces for low-calorie portions
