Dessert in Minutes – Super Soft Apple Cake

Ingredients

Apple topping

  • 1 apple, peeled & diced
  • Juice of ½ lemon
  • 1 tbsp sugar

Cake batter

  • 2 eggs
  • ½ cup (100 g) sugar
  • ½ cup (120 ml) milk
  • ¼ cup (60 ml) vegetable oil
  • 1½ cups (190 g) all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp vanilla (optional)
  • Powdered sugar (for dusting)

Instructions

  1. Prepare the apple
    • Mix diced apple with lemon juice and 1 tbsp sugar.
    • Set aside.
  2. Make the batter
    • Beat eggs with sugar until pale.
    • Add milk, oil, and vanilla. Mix well.
    • Sift in flour and baking powder. Stir until smooth.
  3. Assemble
    • Pour batter into a greased or lined loaf pan.
    • Spoon the apple mixture on top (press lightly).
  4. Bake
    • Bake at 180°C / 350°F for 30–35 minutes
    • Toothpick should come out clean.
  5. Finish
    • Cool slightly, dust with powdered sugar, slice, and enjoy 😍
