Cheesy Potato Roll (10-Minute Prep)

Ingredients

• 3 medium potatoes

• 2 eggs

• 1 cup shredded mozzarella or cheddar

• 1 small onion, finely chopped (optional)

• 2 tbsp flour or cornstarch

• Salt & black pepper to taste

• Paprika or garlic powder (optional)

• Chopped parsley (optional)

• Oil for cooking

Instructions

1. Prepare potatoes

• Peel and grate the potatoes.

• Squeeze out excess liquid using a towel.

2. Mix

• In a bowl, combine grated potatoes, eggs, cheese, onion, flour, salt, pepper, and spices.

• Mix well until thick.

3. Shape & cook

• Heat a lightly oiled non-stick pan.

• Spread the mixture into a rectangle or log shape.

• Cook on medium heat, covered, for 5–6 minutes per side until golden and firm.

OR bake at 200°C (400°F) for 20–25 minutes until browned.

4. Finish

• Sprinkle extra cheese and parsley on top if desired.

• Let rest 2 minutes, slice, and serve.
