Ingredients

For the cake

  • 2 large eggs
  • ½ cup sugar
  • ½ cup milk
  • ⅓ cup vegetable oil (or melted butter)
  • 1½ cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp vanilla extract
  • Zest of 1 lemon (optional but recommended)
  • Pinch of salt

For the glaze (optional but amazing)

  • ½ cup powdered sugar
  • 2–3 tbsp lemon juice or milk

1️⃣ Preheat

  • Preheat oven to 350°F (180°C)
  • Line or grease a loaf pan

2️⃣ Mix wet ingredients

  • In a bowl, whisk:
    • Eggs
    • Sugar
    • Milk
    • Oil
    • Vanilla
    • Lemon zest

3️⃣ Add dry ingredients

  • Add flour, baking powder, and salt
  • Mix just until smooth (don’t overmix)

4️⃣ Bake

  • Pour batter into loaf pan
  • Bake 40–45 minutes
  • Toothpick should come out clean

5️⃣ Glaze

  • Mix powdered sugar with lemon juice or milk
  • Pour over warm cake

💡 Tips

  • Add chopped nuts or chocolate chips if you like
  • Swap lemon for orange zest
  • Even softer? Replace milk with yogurt
