Ingredients
For the cake
- 2 large eggs
- ½ cup sugar
- ½ cup milk
- ⅓ cup vegetable oil (or melted butter)
- 1½ cups all-purpose flour
- 1 tbsp baking powder
- 1 tsp vanilla extract
- Zest of 1 lemon (optional but recommended)
- Pinch of salt
For the glaze (optional but amazing)
- ½ cup powdered sugar
- 2–3 tbsp lemon juice or milk
👩🍳 Instructions
1️⃣ Preheat
- Preheat oven to 350°F (180°C)
- Line or grease a loaf pan
2️⃣ Mix wet ingredients
- In a bowl, whisk:
- Eggs
- Sugar
- Milk
- Oil
- Vanilla
- Lemon zest
3️⃣ Add dry ingredients
- Add flour, baking powder, and salt
- Mix just until smooth (don’t overmix)
4️⃣ Bake
- Pour batter into loaf pan
- Bake 40–45 minutes
- Toothpick should come out clean
5️⃣ Glaze
- Mix powdered sugar with lemon juice or milk
- Pour over warm cake
💡 Tips
- Add chopped nuts or chocolate chips if you like
- Swap lemon for orange zest
- Even softer? Replace milk with yogurt
