Grandma’s Sausage Hashbrown Casserole

Ingredients

• 1 lb breakfast sausage (pork or turkey)

• 1 (20–24 oz) bag frozen shredded hash browns (thawed)

• 2 cups shredded cheddar cheese (sharp is best)

• 1 cup shredded mozzarella or Colby-Jack (optional but great)

• 1 small onion, finely chopped (optional)

• 6 large eggs

• 1½ cups milk (or half-and-half for richer taste)

• ½ cup sour cream

• 1 tsp salt

• ½ tsp black pepper

• ½ tsp garlic powder

• ½ tsp paprika (optional)

👩‍🍳 Instructions

1️⃣ Preheat

• Preheat oven to 375°F (190°C)

• Grease a 9×13 inch baking dish

2️⃣ Cook the sausage

• Brown sausage in a skillet over medium heat

• Break into crumbles

• Drain excess grease

3️⃣ Layer the casserole

• Spread hash browns evenly in the dish

• Add cooked sausage

• Sprinkle onions (if using)

• Top with all the cheese

4️⃣ Mix the eggs

• In a bowl, whisk:

• Eggs

• Milk

• Sour cream

• Salt, pepper, garlic powder, paprika

5️⃣ Assemble

• Pour egg mixture evenly over casserole

• Gently press down so everything is coated

6️⃣ Bake

• Cover with foil and bake 30 minutes

• Uncover and bake 15–20 minutes more

• Top should be golden and bubbly

7️⃣ Rest & serve

• Let rest 10 minutes

• Slice and enjoy 😋
