Ingredients
• 1 cup cottage cheese (full-fat or low-fat)
• 4 large eggs
• 1 cup broccoli, chopped small
• ½ cup bell peppers, diced (red/yellow preferred)
• ½ cup mushrooms, sliced
• ¼ cup onion, finely chopped
• 1 cup spinach or kale, chopped
• ½ cup shredded cheese (optional – cheddar or mozzarella)
• 1 tbsp olive oil
• ½ tsp turmeric
• ½ tsp garlic powder
• ½ tsp black pepper

1️⃣ Preheat oven
• Set oven to 375°F (190°C)
• Grease a small baking dish (8×8 inch works well)

• Heat olive oil in a pan
• Sauté onion + mushrooms for 2–3 minutes
• Add broccoli and peppers, cook 2 more minutes
• Stir in spinach last until wilted
(Do not overcook)

• In a bowl, whisk eggs
• Add cottage cheese, spices, salt, pepper
• Stir until combined
