Ingredients (Serves 4)
For the Biscuits
- 2 cups (250g) all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup (115g) cold butter, cubed
- 3/4 cup (180ml) cold milk or buttermilk
For the Sausage Gravy
- 1 lb (450g) breakfast sausage (pork or turkey)
- 3 tbsp all-purpose flour
- 2 1/2 cups (600ml) milk
- 1/2 tsp black pepper (or more to taste)
- Salt (only if needed)
Preparation (Method)
1) Make the biscuits
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a bowl, mix flour + baking powder + salt.
- Add cold butter and cut it into the flour (with fingers or a pastry cutter) until it looks like coarse crumbs.
- Pour in milk/buttermilk and gently mix just until a dough forms (do not overmix).
- Turn dough onto a lightly floured surface. Pat into a 1-inch (2.5 cm) thick rectangle.
- Cut into biscuits (about 8). Place on the baking sheet.
- Bake 12–15 minutes until golden.
2) Make the sausage gravy
- In a skillet over medium heat, cook sausage until browned, breaking it up with a spoon.
- Sprinkle flour over the sausage and stir for 1 minute to cook out the raw flour taste.
- Slowly pour in milk while stirring constantly.
- Simmer 3–6 minutes until thick and creamy.
- Season with black pepper and salt if needed.
3) Serve
- Split warm biscuits and spoon hot sausage gravy over the top.
