Oatmeal & Apple Bites (No Flour, No Refined Sugar)

These soft, lightly sweet oatmeal and apple bites are quick to mix, easy to bake, and perfect for a healthier snack. They’re made with oats, apples, milk, eggs, and vanilla—that’s it!

Ingredients

1 cup (90 g) rolled oats

⅔ cup (150 ml) warm milk (any kind)

2 apples, peeled and diced small (or grated for a softer texture)

20 g butter (1½ tbsp), melted (or 1½ tbsp coconut oil)

2 large eggs

½ tsp vanillin (or 1 tsp vanilla extract)

Pinch of salt (highly recommended)

Optional (but delicious)

• 1 tsp cinnamon

• 2 tbsp chopped walnuts

• 2 tbsp raisins (adds sweetness)

• 1 tbsp honey or maple syrup (if you want it sweeter)

Instructions

1. Preheat oven to 350°F (175°C). Lightly grease a silicone mold or a mini muffin tin.

2. Soak oats: In a bowl, mix oats with warm milk. Let sit 8–10 minutes to soften.

3. Mix wet ingredients: Add eggs, melted butter, vanilla, and a pinch of salt. Stir well.

4. Add apples: Fold in the diced (or grated) apples. Add any optional ingredients (cinnamon, nuts, etc.).

5. Fill molds: Spoon the mixture into the mold cavities (about ¾ full).

6. Bake for 18–25 minutes, until set and lightly golden on top.

• They should feel firm when pressed and a toothpick should come out mostly clean.

7. Cool: Let rest 10 minutes before removing from the mold.

Tips for Best Results

Grated apples = softer, more cake-like bites.

Diced apples = more texture and juicy pieces.

• If the batter looks too wet (very juicy apples), add 1–2 tbsp extra oats.

Storage

Fridge: up to 4 days in an airtight container

Freezer: up to 2 months (thaw overnight or warm 20–30 seconds in microwave)
