Chicken + Marinade
• 1 ½ lbs (680 g) chicken tenders
• 1 cup plain Greek yogurt
• 2 tbsp lemon juice
• 1 tbsp red wine vinegar
• 1 tbsp olive oil
• 3 cloves garlic, minced
• 1 tsp dried oregano
• 1 tsp paprika
• ½ tsp onion powder
• ¾ tsp salt
• ½ tsp black pepper
Crispy Coating
• 1 cup panko breadcrumbs
• ½ cup grated Parmesan (optional but very crispy)
• ½ cup all-purpose flour (or gluten-free flour)
• 1 tsp dried oregano
• ½ tsp paprika
• ½ tsp salt
• ¼ tsp black pepper
For Cooking
• 2–3 tbsp olive oil (for pan frying)
OR cooking spray/olive oil spray (for baking or air fryer)

Instructions
1) Marinate
1. In a bowl, whisk together Greek yogurt, lemon juice, red wine vinegar, olive oil, garlic, oregano, paprika, onion powder, salt, and pepper.
2. Add chicken tenders and coat well.
3. Cover and refrigerate at least 30 minutes (best: 2–8 hours).

2) Set up the coating station
1. In one bowl: flour.
2. In another bowl: panko + Parmesan + seasonings.
3. Remove tenders from marinade (let excess drip off).
4. Dredge each tender in flour, then press into panko mixture until well coated.
